From my past similar experiences:

Kept a Toyota Prius more than 1000 miles past due for preventative maintenance. This Toyota Prius also had damage to the inner area of the right wheel well, causing a grinding noise when the wheel was turned. It was also returned with a sticky substance on the passenger side of the car which required much time and effort to remove.

When calling to report overdue service, I've always been told "don't worry, it's been serviced well before it was needed but they just forgot to reset the service message" I now don't worry about it anymore, but considering this, I might just continue to report issues for CYA. I'd say about 1 in 6 cars I rent have some sort of service message shortly after driving off the lot. And the amount of times I've encountered sticky substance anywhere in a rental...

Had a mechanical issue with a 2015 Mazda 3 where the starter was damaged at 314 miles.

Without knowing much more details, isn't this a warranty item? I thought newer cars have starter protection which prevents you from cranking while the engine is running. Is there an other way someone could intentionally damage this?

Had a mechanical issue with the replacement vehicle a 2014 Nissan Versa. Vehicle was returned to us with the battery and brake light on. Physical damage was found to the braking system from heavy braking.

Unless they specifically checked the brakes before and after OP rented the vehicle, this is probably circumstantial. Especially on an older econobox which has probably seen many "lowest bidder" renters.

Had a mechanical issue with a 2015 Kia Soul where the engine was damaged at 2401 miles and will require replacement.

I can't say I've seen this one before How does one intentionally damage an engine with less than 2500 miles to work with
I hope that they provided OP with estimates from an independent service center and credible damage reports for transparency to be doing all this. I'd completely understand EHI if the returned cars looked like they came back from a demolition derby all banged up and OP was claiming the LDW, in fact, I'd be disappointed if they didn't do this. The fact is, all of these damage items are impossible to easily observe on a walk around. Even if they were, there's really no provision on a damage form to indicate non-cosmetic damage.
