But, unfortunately, it turns out united.com WAS listing just about all the flights! They must be only releasing routes until they fill up and the introducing new ones.

For example, the central part of my flighht (flying SFO to LHR) can be done many ways:direct, via IAH, LAX, IAD etc. but only the direct and some of the IAH show up. Those have plenty of capacity which brought me to my conclusion.
