You can tell from their flight schedules. A Senior FA in fact taught me that.
A FA rather than HKG-based will not get other routes at all. In other word, if a FA is overseas-stationed, he or she will only get the route back and forth between HKG and that overseas station, such as a SFO crew will not get HKG-LHR.
