Seriously, mental / emotional stress can cause most to go off tilt if it's the right stressor - it's sad when it happens. And often, there's an underlying cause. Many laughed at Gerard Finneran when he dropped trou and defecated on drinks cart, but it turns out he was in a stage of dementia, and the alcohol may have diminished his inhibitions at a time when his mentation was already disturbed.

I saw a person removed by ground staff and law enforcement at MIA form a DC-10 once, as the person began to decompensate and shout he was afraid the plane would crash and had a bomb on board - followed by shouting he did not want to be removed. IANAP but it looked a lot like Tourrette's. The stress of flying and what else was going on was too much for the individual.
