My experience has been that German immigration is very efficient - 2.5 hours would be enough - plan for some extra time to clear US security in MUC, though. MUC is a clean, efficient, manageable airport.
I would not risk it, though...anything can chip into that 2.5 hour layover - weather, air traffic, strikes...who knows. A last minute airfare to the US is not cheap.
