But the point is (I think) that while you're travelling, you're stuck in this environment for maybe 10 hours. Surely you would want to make that environment as nice as possible.

The selection of food and wine on offer are two of the biggest variables on such a journey, and it makes sense to explore the options if that is your wont.

Of course, you are welcome to your water (I would say "in addition to ..." rather than "instead of ..." but each to their own).
