Flying is something I do to get to my destination. Should I wish to drink champagne, I will purchase a bottle of my favorite brand and consume it in good company at a time and place of my choosing. I can think of lots of suitable places, but the cabin of a commercial airliner is not one of them.
So why all the excitement? Why the whinging about the quality and selection? Who cares? The air high up in the sky is dry, you taste buds are dulled, so rather drink water.
But the point is (I think) that while you're travelling, you're stuck in this environment for maybe 10 hours. Surely you would want to make that environment as nice as possible.
The selection of food and wine on offer are two of the biggest variables on such a journey, and it makes sense to explore the options if that is your wont.
Of course, you are welcome to your water (I would say "in addition to ..." rather than "instead of ..." but each to their own).
