Sorry, not going to be that straightforward--SGN isn't that big of an international hub. You have two conceptual choices:
1) Stay in Vietnam. Mui Ne is driveable from HCMC. By, air, Nha Trang and Con Dao have been mentioned above, but check weather for the former and research the latter to see if it's your cup of tea. Also Phu Quoc, which might be your best bet, you'd round-trip domestically fly this to/from HCMC then do an international flight to Bangkok for your onward. All of these are probably the most time- and cost-effective vs the next category.

2) Leave Vietnam. If you want to stay in SE Asia, you'll have to go through somewhere else first. Either SIN, then connect to a different destination, or KUL. You could try KUL then head for somewhere like Langkawi. Or just go back via BKK and HKT, and then go north to Khao Lak by road. Or BKK then Samui on the Gulf side. You could also fly to Manila and connect to somewhere like Boracay, though that's a lot more work to get to and likely requires an overnight in Manila.

Selection might also depend on how much time you have, if you want opportunities for more activities than just laying on a beach, and budget.
