You will definitely be able to get on a earlier or later YYZ JFK on the same day however SDC at YYZ you need to factor in the YYZ CATSA and CBP process which during busy US bound hours can be 2+ hours.
Perhaps you can let me know your YYZ JFK flight info, where in the city are you getting to the airport from and method of airport transfer I can advice timing required. You can PM me if you do not want this info posted in public.
Depending on your fare class or routing SDC onto a different itinerary like what you suggested might not be possible.
