Which Holiday Inn? The HI and HI Express in "downtown" Seattle are not - they're up by Seattle Center, well out of range of the light rail and airporter limousines. Your best bet will be either a cab or Shuttle Express.

Good seafood restaurants in Seattle? Uh... yeah.

If you want oysters in particular, it's hard to beat Elliott's Oyster House right on the central waterfront below the Pike Place Market. Something of a schlep from the HI, but worth it. http://www.elliottsoysterhouse.com/
