Hyatt's
Hotel Mar Monte squeaks in under your $250/night cost (albeit before tax is added) for a weeknight I checked in late July. Renovations are to be complete in May. The hotel is across the street from the beach. Here's a thread on the property, though recognize all posts are about the hotel pre renovation.

I stayed at the Holiday Inn Express in the heart of town. The location was great, the hotel not so much.
