I had a colleague stay at the Fairmont Pacific Rim a few weeks ago. Her comment was that it was "fantastic".
Do keep in mind that the Convention Center is in the business core of Vancouver - which means it becomes quite dead after 6 pm. I know as my office is right across from the Fairmont Pacific Rim.
However, it's a quick 10-15 min walk to the shopping area of downtown. Or about a 10 min walk to Gastown.
