My best guess would be that AA doesn't really care that much about traffic out of EWR, they serve a meal at least. AA gets the over flow traffic from UA/CO (there will always before people who don't like UA/CO and would rather fly someone else.) Since AA really push's its NY flights I can see why JFK and LGA flights are catered better.

Its not a time thing either. The EWR-ORD AA morning flight is blocked at 2:55 - over the 2:30 usually required for hot breakfast.
