I agree with virtually all of your observations especially the one about trying to sleep on a red-eye in a 757 in FC. What were they thinking?
In contrast, the MD-80 in FC is a pleasure especially on a lunch flight. Small cabin, quiet, good unhurried service and usually a nice cold salad with some chicken or fish.
