Everybody gets off of the airplane at the international gateway city (LAX, or wherever it is) with all of their luggage so that a security sweep can be done of the airplane. You'll then reboard the aircraft at 30 or 40 minutes prior to departure. I don't see why you couldn't change who sits up front at that point since it'll be like you're taking a whole new flight (re-storing your carryon bags, etc...).
