On the other hand - I had 6 segments on an international trip in the last few days; 5 on sUA metal and 1 on sCO metal. On every one of the sUA flights the FAs said "We'd like to add a special welcome to our Mileage Plus and OnePass members..." The crew on the sCO flight were the only ones to get it right. Have a huge segment of the sUA FA base just not updated their manuals in the last year?

It's not the manuals, it's old habits, as you note. Or maybe they just don't look at their manuals anymore.

I've noticed the OnePass terminology so frequently on sUA flights (and so rarely on sCO flights) that I'm not sure that's the case. This isn't even a long-ingrained habit, sUA FAs only had to mention OnePass for a very short length of time.
What the OP mentioned though definitely sounds like an FA on autopilot

I can't recall any mention of OP on sUA flights, and I've done about 50 of them this year...it's not in their lingo

Then you beat the odds. The MP/OP language was in all UA/UX FA manuals from both subsidiaries around the start of the year. I will say, after 3/3 and the death of OP, the OP references on sUA declined quickly for me, while on sCO the change has been more gradual.

There's a big difference between referencing nOnePass (which existed fairly recently) and referencing SkyTeam which CO left prior to the merger.

It's still in the current manuals. Or at least was still in a manual on a CO 757-200 a couple weeks ago. I was talking to a flight attendant in the jumpseats in the 1L doorway and the book with all the different announcements' scripts was sitting right there. Still has MP/OP language. Not sure if they've updated it but not adequately distributed them yet.

Of all the things to get right after the merger, this must rank pretty well last.
