Charles Heidsieck Brut Reserve, Champagne, France
Charles Heidsieck regularly offers the deepest, the roundest and the most fascinating flavours of the well-known champagne producers in its non vintage wines. An unusually high percentage of mature wine - 40% - is blended in with younger wine to create the smoothest, most relaxing champagne available. Some of the mature reserve wine used for blending may be as much as 15 years old, and adds immeasurably to the nutty softness and the mellow savory elegance of the wine.

2015 Mud House Sauvignon Blanc, Marlborough, New Zealand
New Zealand's Marlborough region is home to many of the world's most distinctive Sauvignon Blanc wines. Produced by one of the region's most respected winery, this racy and vibrant wine has a strong international reputation and is typified by a lifted herbaceous leafy aroma, crisp mouthwatering acidity and wonderful overall freshness. Light and fresh, it goes well with seafood, chicken and most salads. With its strong aromas and flavors, the wine is also a match for most Asian dishes.

2015 Coldstream Hills Chardonnay, Yarra Valley, Australia
The cool climate of the Yarra Valley east of Melbourne is particularly well suited to growing chardonnay of exceptional quality. Sourced from selected hillside vineyards in the Upper and Lower Yarra this wine was fermented and matured on yeast lees for nine months in a mixture of new and seasoned French oak barrels prior to bottlings. Made by talented winemaker Andrew Flemming this wine is an excellent example of the exciting "new wave" of Australian Chardonnay attracting so much attention internationally.

Red Wine

2013 Robert Oatley Shiraz, McLaren Vale, Australia
Robert Oatley, the patriarch of the Oatley family, is well known for his interests in competitive sailing, tourism and wine. The Oatley wines are made by highly rated consultant winemaker - Larry Cherubino, and are sourced from a diverse range of quality regions across Australia. An excellent example of modern Shiraz, this wine combines great fruit intensity with characteristic McLaren Vale softness. Excellent with Western or Asian style chicken, beef or lamb dishes.

2012 Château Belle-Vue Cru Bourgeois Haut Medoc, Bordeaux, France
I needed an umbrella more than a tasting glass as I tramped around the vineyards of Bordeaux during the 2012 vintage. Spirits and expectations were low. But it shows the skill of the good modern Bordeaux estates that they have managed to produce delightful, characterful wines. Belle-Vue is an impressive property, with vines nudging those of southern Margaux, and this wine has tremendous dark, ripe depth, its blackcurrant and black cherry fruit streaked with spice and the mouthwatering chewiness of fine Haut Medoc red.

2012 Chateau Peyrabon Haut Medoc, Bordeaux, France
Chateau Peyrabon has always been a very serious wine, situated right next to the star-studded village of Pauillac. In fact, when the local producers organised their wines into the famous classification of 1855, Peyrabon's owner was so amazed to be left out that he sued the organizers! He didn't win, but taste the wine, and you can see his point. It's dark and ripe, laden with black fruit and with a mineral flavour like the rattling of vineyard stones. And in a gentle year like 2012, the wine allows itself to be a little juicier and softer than usual, without ever quite losing its earthy muscularity.

2014 Stonier Pinot Noir, Mornington Peninsula, Australia
The cool maritime climate of the Mornington Peninsula south of Melbourne is particularly well suited to growing top quality Pinot Noir. Stonier is one of the pioneers of the region and this wine, made by talented winemaker Mike Symons, shows all the bright fruit vibrancy of this exciting wine style. The wine pairs well with Asian meat and fish dishes.

Taylor's 10-Year-Old Tawny Port, Portugal
Founded in 1692 and still in family hands, Taylor's holds one of the largest reserves of oak-aged Port, wines that lose their dark red colour in the barrel to become "tawny" and gain a supple, spicy, nutty sweetness of flavor. The perfect accompaniment to cheese, this wine also pairs very well with chocolate desserts.

2013 Marchesi de Frescobaldi Castello di Nipozzano "Nipozzano", Chianti Rufina Riserva, Tuscany, Italy
This charming Chianti is a wonderful example of the quality of red wines produced by the renown Frescobaldi family whose roots in the region date back 700 years. The wine is produced in a gorgeous, ancient castle called Nipozzano in the heat of Chianti Rufina. Nipozzano offers layers of cherry, blackcurrant and roasted herb flavors with velvety firm tannins. This is a generous, full-bodied red that is sophisticated and quite modern in style without being overly ripe. Chateau Peyrabon has always been a very serious wine, situated right next to the star-studded village of Pauillac. In fact, when the local producers organised their wines into the famous classification of 1855, Peyrabon's owner was so amazed to be left out that he sued the organizers! He didn't win, but taste the wine, and you can see his point. It's dark and ripe, laden with black fruit and with a mineral flavour like the rattling of vineyard stones. And in a gentle year like 2012, the wine allows itself to be a little juicier and softer than usual, without ever quite losing its earthy muscularity.

2013 Marchesi de Frescobaldi Castello di Nipozzano "Nipozzano", Chianti Rufina Riserva, Tuscany, Italy
This charming Chianti is a wonderful example of the quality of red wines produced by the renown Frescobaldi family whose roots in the region date back 700 years. The wine is produced in a gorgeous, ancient castle called Nipozzano in the heat of Chianti Rufina. Nipozzano offers layers of cherry, blackcurrant and roasted herb flavors with velvety firm tannins. This is a generous, full-bodied red that is sophisticated and quite modern in style without being overly ripe. Enjoy this wonderfully balanced, supple wine to pair with a wide range of red meat dishes.

Taylor's 10-Year-Old Tawny Port, Portugal
Founded in 1692 and still in family hands, Taylor's holds one of the largest reserves of oak-aged Port, wines that lose their dark red colour in the barrel to become "tawny" and gain a supple, spicy, nutty sweetness of flavor. Barons de Rothschild Blanc de Blancs
This Champagne is the fruit of a fairly new joint venture between three Rothschild families, Baron Eric de Rothschild (Chateau Lafite-Rothschild), Baron Philippe de Rothschild (Chateau Mouton-Rothschild) and Baron Edmond de Rothschild (Chateau Clarke). This Blanc de Blancs cuvee is composed of Chardonnay from the finest Grand Cru vineyards in Champagne, such as Cramant, Avize and Mesnil-Sur-Oger. It's carefully blended and aged for at least 4 years on the lees before release and it contains a high proportion of reserve wines that adds complexity and depth. It's an elegant Champagne showing a mineral nose with finely toasted notes with hints of nuts, brioche, fresh butter and citrus. On the palate it's lusciously creamy with a distinct freshness, elegant notes of yellow fruit and a long persistent finish with nutty tones. A champagne full of pleasure and elegance for aperitif or fine dishes of fish and seafood.

Laurent Perrier Brut
The Laurent-Perrier Brut it's a very classical and stylish Champagne. It is distinguished by a high proportion of Chardonnay (50%) that gives its purity and finesse above all. Then it's complemented by 35% of Pinot Noir and 15% of Pinot Meunier for fruitiness and texture. Laurent-Perrier is skillfully blended from between 50 and 60 different Crus all ranked as Premier or Grand Cru with a slight proportion of reserve wine for depth and harmony. The nose is first and foremost and elegant example with good purity displaying white fleshed fruit such as green apple, pear and citrus with some mineral notes and hints of fresh nuts. The palate has a distinct freshness with a creamy texture, fine bubbles and a persistent finish with a pleasing freshness. A harmonious Champagne, ideal for aperitif, starters and lighter dishes based on fish and seafood.

White Wine

Chateau Latour Martillac 2012
Chateau Latour-Martillac remains one of the benchmark white Bordeaux wines thanks to its excellent situation and high standards of wine making. This historical terrior in the Pessac-Leognan gives wines full of finesse and structure, blending the aromatic freshness of the Sauvignon Blanc with the power and texture of the Semillon. Aromatically the wine is pure and intense with notes of honey, beeswax, tropical fruit and some distinct notes of aromatic herbs. The palate is classically bone dry even if the rich fruit suggests sweetness, nicely textured and flavor intense followed by a very long and appetizing freshness on the finish. An elegant wine to pair with fine fish and seafood dishes as well as poultry and white meat.

Robert Mondavi Chardonnay Reserve 2014
The name Robert Mondavi is synonymous to top quality Californian wine. And this Chardonnay remains a reference for the variety as well. This excellent vintage gave a good ripeness with well retained freshness. The hand harvested grapes were fermented with natural yeast in Burgundian barrels where the wine was aged for 13 months. The result is an aromatic and layered nose of ripe stone fruit, pear and fine nutty notes as well as discreet vanilla and oak. The palate is broad and textured with a well-integrated acidity and a lush aftertaste with generous fruit. A full bodied white wine that pairs well with richer dishes based on fish and seafood, also very suitable to chicken, white meat and spicier Korean dishes.

Cederberg Sauvignon Blanc 2016
The Cederberg Sauvignon Blanc is constantly one of the top wines of South Africa. A very "serious" Sauvignon Blanc from poor soils that gives a nicely firm and mineral example influenced by generous sun and cool winds. This youthful wine boasts a very aromatic nose of gooseberries, lime, lemongrass and notes of fresh herbs. The palate is marked by a tremendous freshness and purity, layered with generous fruit and a very rewarding aftertaste. An elegant wine that's very appetizing and refreshing to start your meal or to pair with lighter dishes based on fish and seafood.

Red Wine

Chateau Fleur Cardinale Grand Cru Classe 2011
Chateau Fleur Cardinale has been a true success story! Since the Decoster family bought the estate, so much effort has been put down to make one of the best wines of Saint-Emilion and Bordeaux. Located on a magnificent limestone terroir this is a wine that boasts both incredible power and a remarkable freshness. Being composed of mainly Merlot (70%) and blended with 15% of Cabernet Franc and 15% of Cabernet Sauvignon. The 2011 was a very successful vintage in Saint-Emilion and this example is showing a fine maturity with a complex nose of dark fruits, plum, cherry and blackberry underlined by finely toasted notes of new oak and vanilla. The palate is dense and powerful with finely integrated tannins, luscious fruit and a long, lingering finish. A true definition of modern Bordeaux, a rewarding wine for western style braised and grilled meat dishes as well as for Korean barbecue and dark meat dishes.

Murrieta's Well, The Spur 2013
California. The Murietta's Well range represents the finest wines from their estate vineyards in Livermore Valley. The 2013 "The Spur" is a dynamic blend of Petite Sirah, Cabernet Sauvignon and Petit Verdot. It's a rich and mouth filling wine distinctly Californian with plenty of character. The nose is forward and fruity with a layered spiciness and plenty of dark berry character paired with some new oak followed by a dens and structured palate with a lot of flavor intensity, plenty of spicy dark fruit, cassis and cherry with hints of sage and mint of the finish. Very savoury and refreshing with good weight and quality tannin to be paired with rich and intense meat dishes and spicy Korean dishes.

Gran Claustro 2011
Wine has been made at Castillo Perelade since the middle ages. Today the tradition continues and some of the most vibrant and modern wines are coming out of this beautiful part of north eastern Spain. The Gran Claustro is the flagship red wine that is a blend of mainly Cabernet Sauvignon and Garnacha that's carefully handpicked and aged in French oak for 18 months. This 2011 is the result of a very good vintage that has reached a fine complexity and drinkability today showing a rich nose of tobacco, leather, fine spices and lush dark fruit with some discreet notes of wood. The palate follows with a dense mouthfeel layered with dark berries and notes of chocolate and Mediterranean herbs. Rich and intense on the finish with a fine persistence, this is truly a fine wine to enhance your meal, excellent with Korean meat dishes and western style poultry and meat dishes.

Taylor's 20 year Old Tawny Port
The house of Taylor truly belongs to the elite of the Port wine producers and particularly their range of Tawny Ports are always used as a reference. This 20 year old Tawny has reached a perfect pedigree with astounding mature and complex aromas emerging such as dried fruit, dates and figs with caramel, spices and tobacco. The palate has an intense sweetness but thanks to the age, it appears a but more mellow and sophisticated with a warming sensation and very long nutty finish. Ideal for your cheese plate or desserts based on eggs, nuts or chocolate.

Chateau Pajzos Tokaj Aszu 5 Puttonyos 2006
"The king of wines and the wine for kings" they used to say as this very historical wine style was the preferred wine for kings, princes and the nobility of Europe since the 15th century. A truly unique and unparalleled wine style thanks to the indigenous grape varieties, unique climate of north eastern Hungary and the particular style of vinification. This example from the brilliant vintage 2006 has reached a good level of maturity and complexity, the nose is very intense and offers a plethora of tropical fruit, honey, saffron, red pepper and a lot of spice. Tasting this rare nectar leaves your palate full of impressions as the luscious texture with a tremendous combination between sweetness and freshness really works wonders. It has a tremendous aftertaste and length with those spicy notes and the honey glazed fruit lingering on the palate. Barons de Rothschild Blanc de Blancs
This Champagne is the fruit of a fairly new joint venture between three Rothschild families, Baron Eric de Rothschild (Chateau Lafite-Rothschild), Baron Philippe de Rothschild (Chateau Mouton-Rothschild) and Baron Edmond de Rothschild (Chateau Clarke). This Blanc de Blancs cuvee is composed of Chardonnay from the finest Grand Cru vineyards in Champagne, such as Cramant, Avize and Mesnil-Sur-Oger. It's carefully blended and aged for at least 4 years on the lees before release and it contains a high proportion of reserve wines that adds complexity and depth. It's an elegant Champagne showing a mineral nose with finely toasted notes with hints of nuts, brioche, fresh butter and citrus. On the palate it's lusciously creamy with a distinct freshness, elegant notes of yellow fruit and a long persistent finish with nutty tones. A champagne full of pleasure and elegance for aperitif or fine dishes of fish and seafood.

Laurent Perrier Brut
The Laurent-Perrier Brut it's a very classical and stylish Champagne. It is distinguished by a high proportion of Chardonnay (50%) that gives its purity and finesse above all. Then it's complemented by 35% of Pinot Noir and 15% of Pinot Meunier for fruitiness and texture. Laurent-Perrier is skillfully blended from between 50 and 60 different Crus all ranked as Premier or Grand Cru with a slight proportion of reserve wine for depth and harmony. The nose is first and foremost and elegant example with good purity displaying white fleshed fruit such as green apple, pear and citrus with some mineral notes and hints of fresh nuts. The palate has a distinct freshness with a creamy texture, fine bubbles and a persistent finish with a pleasing freshness. A harmonious Champagne, ideal for aperitif, starters and lighter dishes based on fish and seafood.

White Wine

Chateau Latour Martillac 2012
Chateau Latour-Martillac remains one of the benchmark white Bordeaux wines thanks to its excellent situation and high standards of wine making. This historical terrior in the Pessac-Leognan gives wines full of finesse and structure, blending the aromatic freshness of the Sauvignon Blanc with the power and texture of the Semillon. Aromatically the wine is pure and intense with notes of honey, beeswax, tropical fruit and some distinct notes of aromatic herbs. The palate is classically bone dry even if the rich fruit suggests sweetness, nicely textured and flavor intense followed by a very long and appetizing freshness on the finish. An elegant wine to pair with fine fish and seafood dishes as well as poultry and white meat.

Robert Mondavi Chardonnay Reserve 2014
The name Robert Mondavi is synonymous to top quality Californian wine. And this Chardonnay remains a reference for the variety as well. This excellent vintage gave a good ripeness with well retained freshness. The hand harvested grapes were fermented with natural yeast in Burgundian barrels where the wine was aged for 13 months. The result is an aromatic and layered nose of ripe stone fruit, pear and fine nutty notes as well as discreet vanilla and oak. The palate is broad and textured with a well-integrated acidity and a lush aftertaste with generous fruit. A full bodied white wine that pairs well with richer dishes based on fish and seafood, also very suitable to chicken, white meat and spicier Korean dishes.

Cederberg Sauvignon Blanc 2016
The Cederberg Sauvignon Blanc is constantly one of the top wines of South Africa. A very "serious" Sauvignon Blanc from poor soils that gives a nicely firm and mineral example influenced by generous sun and cool winds. This youthful wine boasts a very aromatic nose of gooseberries, lime, lemongrass and notes of fresh herbs. The palate is marked by a tremendous freshness and purity, layered with generous fruit and a very rewarding aftertaste. An elegant wine that's very appetizing and refreshing to start your meal or to pair with lighter dishes based on fish and seafood.

Red Wine

Chateau Fleur Cardinale Grand Cru Classe 2011
Chateau Fleur Cardinale has been a true success story! Since the Decoster family bought the estate, so much effort has been put down to make one of the best wines of Saint-Emilion and Bordeaux. Located on a magnificent limestone terroir this is a wine that boasts both incredible power and a remarkable freshness. Being composed of mainly Merlot (70%) and blended with 15% of Cabernet Franc and 15% of Cabernet Sauvignon. The 2011 was a very successful vintage in Saint-Emilion and this example is showing a fine maturity with a complex nose of dark fruits, plum, cherry and blackberry underlined by finely toasted notes of new oak and vanilla. The palate is dense and powerful with finely integrated tannins, luscious fruit and a long, lingering finish. A true definition of modern Bordeaux, a rewarding wine for western style braised and grilled meat dishes as well as for Korean barbecue and dark meat dishes.

Murrieta's Well, The Spur 2013
California. The Murietta's Well range represents the finest wines from their estate vineyards in Livermore Valley. The 2013 "The Spur" is a dynamic blend of Petite Sirah, Cabernet Sauvignon and Petit Verdot. It's a rich and mouth filling wine distinctly Californian with plenty of character. The nose is forward and fruity with a layered spiciness and plenty of dark berry character paired with some new oak followed by a dens and structured palate with a lot of flavor intensity, plenty of spicy dark fruit, cassis and cherry with hints of sage and mint of the finish. Very savoury and refreshing with good weight and quality tannin to be paired with rich and intense meat dishes and spicy Korean dishes.

Gran Claustro 2011
Wine has been made at Castillo Perelade since the middle ages. Today the tradition continues and some of the most vibrant and modern wines are coming out of this beautiful part of north eastern Spain. The Gran Claustro is the flagship red wine that is a blend of mainly Cabernet Sauvignon and Garnacha that's carefully handpicked and aged in French oak for 18 months. This 2011 is the result of a very good vintage that has reached a fine complexity and drinkability today showing a rich nose of tobacco, leather, fine spices and lush dark fruit with some discreet notes of wood. The palate follows with a dense mouthfeel layered with dark berries and notes of chocolate and Mediterranean herbs. Rich and intense on the finish with a fine persistence, this is truly a fine wine to enhance your meal, excellent with Korean meat dishes and western style poultry and meat dishes.

Chateau Pajzos Tokaj Aszu 5 Puttonyos 2006
"The king of wines and the wine for kings" they used to say as this very historical wine style was the preferred wine for kings, princes and the nobility of Europe since the 15th century. A truly unique and unparalleled wine style thanks to the indigenous grape varieties, unique climate of north eastern Hungary and the particular style of vinification. This example from the brilliant vintage 2006 has reached a good level of maturity and complexity, the nose is very intense and offers a plethora of tropical fruit, honey, saffron, red pepper and a lot of spice. Tasting this rare nectar leaves your palate full of impressions as the luscious texture with a tremendous combination between sweetness and freshness really works wonders. Charles Heidsieck regularly offers the deepest, the roundest and the most fascinating flavours of the well-known champagne producers in its non vintage wines. An unusually high percentage of mature wine - 40% - is blended in with younger wine to create the smoothest, most relaxing champagne available. Some of the mature reserve wine used for blending may be as much as 15 years old, and adds immeasurably to the nutty softness and the mellow savory elegance of the wine.

2014 Selbach Riesling Kabinett Feinherb, Mosel, Germany
They have a way of describing how good a wine is in Germany's Mosel Valley - Trinkfloss - how well and how easily a wine goes down the throat. They judge it by how quickly the bottles are emptied. And this delightful Riesling wine from the majestic slopes of the Mosel Valley around the ancient village of Zelting would score highly on the Trinkfloss scale. 2014 wasn't a very ripe vintage, so this wine has a mouthwatering "almost ripe" crispness of green apples and boiled lemon peel, happily keeping the riper flavours of peach and apricot flecked with honey well in the background.

2014 Wild Horse Winery and Vineyards Chardonnay, Central Coast, USA
A generous Chardonnay filled with fresh apple, citrus, apricot and vanilla flavors. There is freshness in this wine along with a cream palate that makes the wine charming and delicious to enjoy now. Grapes were sourced from the Central Coast of California and then aged in French oak barrels for nine months. This vibrant Chardonnay pairs well with a variety of seafood and can even stand up to spices and strong seasonings.

2012 Château Belle-Vue Cru Bourgeois Haut Medoc, Bordeaux, France
Belle-Vue is an impressive property, with vines nudging those of southern Margaux, and this wine has tremendous dark, ripe depth, its blackcurrant and black cherry fruit streaked with spice and the mouthwatering chewiness of fine Haut Medoc red. The wine pairs well with red meat, poultry dishes and cheeses.

Chateau Peyrabon has always been a very serious wine, situated right next to the star-studded village of Pauillac. In fact, when the local producers organised their wines into the famous classification of 1855, Peyrabon's owner was so amazed to be left out that he sued the organizers! He didn't win, but taste the wine, and you can see his point. It's dark and ripe, laden with black fruit and with a mineral flavour like the rattling of vineyard stones. And in a gentle year like 2012, the wine allows itself to be a little juicier and softer than usual, without ever quite losing its earthy muscularity.

2013 Robert Oatley Shiraz, McLaren Vale, Australia
Robert Oatley, the patriarch of the Oatley family, is well known for his interests in competitive sailing, tourism and wine. The Oatley wines are made by highly rated consultant winemaker Larry Cherubino, and are sourced from a diverse range of quality regions across Australia. An excellent example of modern Shiraz, this wine combines great fruit intensity with characteristic McLaren Vale softness. Excellent with Western or Asian style chicken, beef or lamb dishes.

2015 Coldstream Hills Chardonnay, Yarra Valley, Australia
The cool climate of the Yarra Valley east of Melbourne is particularly well suited to growing chardonnay of exceptional quality. Sourced from selected hillside vineyards in the Upper and Lower Yarra this wine was fermented and matured on yeast lees for nine months in a mixture of new and seasoned French oak barrels prior to bottlings. Made by talented winemaker Andrew Flemming this wine is an excellent example of the exciting "new wave" of Australian Chardonnay attracting so much attention internationally.

2013 Robert Oatley Shiraz, McLaren Vale, Australia
Robert Oatley, the patriarch of the Oatley family, is well known for his interests in competitive sailing, tourism and wine. The Oatley wines are made by highly rated consultant winemaker - Larry Cherubino, and are sourced from a diverse range of quality regions across Australia. An excellent example of modern Shiraz, this wine combines great fruit intensity with characteristic McLaren Vale softness. Excellent with Western or Asian style chicken, beef or lamb dishes.

2012 Château Belle-Vue Cru Bourgeois Haut Medoc, Bordeaux, France
I needed an umbrella more than a tasting glass as I tramped around the vineyards of Bordeaux during the 2012 vintage. Spirits and expectations were low. But it shows the skill of the good modern Bordeaux estates that they have managed to produce delightful, characterful wines. Belle-Vue is an impressive property, with vines nudging those of southern Margaux, and this wine has tremendous dark, ripe depth, its blackcurrant and black cherry fruit streaked with spice and the mouthwatering chewiness of fine Haut Medoc red.

2012 Chateau Peyrabon Haut Medoc, Bordeaux, France
Chateau Peyrabon has always been a very serious wine, situated right next to the star-studded village of Pauillac. In fact, when the local producers organised their wines into the famous classification of 1855, Peyrabon's owner was so amazed to be left out that he sued the organizers! He didn't win, but taste the wine, and you can see his point. It's dark and ripe, laden with black fruit and with a mineral flavour like the rattling of vineyard stones. And in a gentle year like 2012, the wine allows itself to be a little juicier and softer than usual, without ever quite losing its earthy muscularity.

2014 Stonier Pinot Noir, Mornington Peninsula, Australia
The cool maritime climate of the Mornington Peninsula south of Melbourne is particularly well suited to growing top quality Pinot Noir. The innovative and visionary talent of Mme Clicquot herself has made this Champagne label one of the most recognised and successful of the region. Produced exclusively from the 8 hectare vineyard the result is classical; mineral and slate that frame lime citrus along with exotic blossoms. Initially round, the palate evolves to refreshing dryness that is powerful and balanced with precision.

Leeuwin Estate Art Series Sauvignon Blanc 2014, Margaret River, Western Australia
Restrained tropical fruits with herbal traces, this is a surprisingly complex wine with fifty percent of the wine seeing old French oak. It doesn't dominate but adds to the layered textural palate and length of the wine. Hints of citrus float through adding to the freshness in this great expression of Sauvignon Blanc from the Margaret River.

Moss Wood Moss Wood Vineyard Chardonnay 2013, Margaret River, Western Australia
Clare and Keith believe the quality of the wine is largely determined in the vineyard and are constantly refining their processes to remain one of the most revered names in the Australian industry. This abundant vintage presents bright straw yellow with green tints, the aroma is of melon, peach blossoms, cashew nuts, and malt. A full, rich palate with layers of stone fruits, a hint of lime and light oak characters.

Giant Steps Applejack Vineyard Pinot Noir 2015, Yarra Valley, Victoria
Winemaker Steve "Flammo" Flamsteed was Gourmet Traveller Wine Magazine Winemaker of the Year in 2016 for good reason and it's his single vineyard wines which have forged his reputation. The Applejack vineyard is a slightly elevated, cooler pocket in the upper Yarra. The wine combined clever use of whole bunch pressing to create a complex Pinot. Dark red fruit characters, fennel and spice combine to create a very elegant Australian Pinot Noir.

Shaw + Smith Balhannah Vineyard Shiraz 2014, Adelaide Hills, South Australia
Envisaged over a long lunch, the intention of creating refined cool climate wines has very much been achieved at Shaw + Smith. Nestled close to Hahndorf, the 46 hectare Balhannah vineyard sits at an altitude of 420 metres. Producing shiraz in this vintage that is deep ruby in colour with hints of dark fruits, black pepper, spice and liquorice aromas. The wine is elegant, medium bodied with great shape and mouthfeel.

Xanadu Reserve Cabernet Sauvignon 2012, Margaret River, Western Australia
Sourced from the Timber Creek vineyard in the Margaret River and spending extended time on skins drew out a powerhouse of characters in this Cabernet intended for cellaring. Complex and layered with vibrant mulberry and red plums, subtle blackcurrant elements are supported by tobacco, bay leaf and toast. Central sweet, dark fruits form the basis of the palate that is concentrated and well-structured with evolving continuity.

Winemaker Steve "Flammo" Flamsteed was Gourmet Traveller Wine Magazine Winemaker of the Year in 2016 for good reason and it's his single vineyard wines which have forged his reputation. The Applejack vineyard is a slightly elevated, cooler pocket in the upper Yarra. The wine combined clever use of whole bunch pressing to create a complex Pinot. Dark red fruit characters, fennel and spice combine to create a very elegant Australian Pinot Noir.

Shaw + Smith Balhannah Vineyard Shiraz 2014, Adelaide Hills, South Australia
Envisaged over a long lunch, the intention of creating refined cool climate wines has very much been achieved at Shaw + Smith. Nestled close to Hahndorf, the 46 hectare Balhannah vineyard sits at an altitude of 420 metres. Producing shiraz in this vintage that is deep ruby in colour with hints of dark fruits, black pepper, spice and liquorice aromas. The wine is elegant, medium bodied with great shape and mouthfeel.

Xanadu Reserve Cabernet Sauvignon 2012, Margaret River, Western Australia
Sourced from the Timber Creek vineyard in the Margaret River and spending extended time on skins drew out a powerhouse of characters in this Cabernet intended for cellaring. Complex and layered with vibrant mulberry and red plums, subtle blackcurrant elements are supported by tobacco, bay leaf and toast. Central sweet, dark fruits form the basis of the palate that is concentrated and well-structured with evolving continuity.

This is one stunningly aromatic dessert wine with tropical fruits and glorious fresh vital passionfruit, lychees and pineapple. This wine is a lighter style with lively acidity supporting the fruit characters. Sweet but balanced and seamless in delivery. Will have you wanting more.
