Moet et Chandon's Cuvee Dom Perignon is the most iconic of all Champagnes. It finishes with an expression of utmost elegance.
Krug Grande Cuvee
Founded in Reims in 1843, the House of Krug is now managed by the 5th and 6th generations of the Krug family. Rigorous selection and care go into every detail of the "multi-vintage" Grande Cuvee, which offers a magical combination of aromatic complexity, power and finesse with a long, lingering finish. Krug is the ultimate experience in Champagne.
White Wine
2013 Dog Point SauvignonBlanc, Marlborough, New Zealand
Dog Point achieved immediately cult status when first released in 2004. This was not surprising given the pedigree and experience of the founding partners. Viticulturist Ivan Sutherland and oenologist James Heally, both had held key roles at Cloudy Bay for over a decade before beginning their Dog Point collaboration. Dog Point is Estate grown and boasts some of the regions finest vineyard sites.
2008 Domaine William Fevre Montmains, Chablis Premier Cru, France
One of France's most famous wine regions, Chablis produces the most classic white Burgundies from 100% Chardonnay grapes grown on a chalky soil that brings a floral raciness to the wine. The 98 hectare Premier Cru Montmains is well-situated on the left bank of the river Serein to produce wines with a distinctive elegance and length of flavour, particularly in an excellant vintage like 2008.
Red Wine
2004 Chateau Leoville-Poyferre Saint-Julien, Bordeaux, France
This splendid estate covering 80 hectares of vines in the best part of the Medoc, was named as a Second Growth in the famous classification of the best Bordeaux wines in 1855 and has retained this high status ever since. Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot are harvested at their peak of ripeness to make this classic "Bordeaux Blend". Deep carmine-ruby in colour, with fragrantly intense aromas of red and black berries, the rich concentration of fruit on the palate is balanced by an elegantly firm finish. It is eminently suited to white and red meats and of course perfect with cheese.
2012 Teusner Albert Shiraz, Barossa Valley, Australia
Teusner is an exciting partnership between winemaker Kym Teusner and Michael Page the cornerstone of which is their reverence for low yielding, old, dry grown Barossa vines. These old vines produce Shiraz of great flavour, intensity and softness. This is a contemporary style from the internationally acclaimed Barossa Valley.
2005 Louis Latour Chateau Corton Grancey Grand Cru
Louis Latour is the largest vineyard owner of this Grand Cru in the Cote de Beaune, posessing 16 of the 120 hectares of Corton. Chateau Corton-Grancey is their flagship wine. Youthful deep red in colour with beautifully expressed red berry fruits on the nose that show both freshness and depth, both rich and smooth on the palate, the firm vigour of Corton is matched by the class from a great year, with a long, lingering finish.
Sweet Wine
2009 Chateau Filhot Sauternes
With south-west facing vines surrounding one of the most impressive 18th century Bordeaux Chateaux, Filhot was classified a top Second Growth in 1855 and subsequent generations of the Comte de Vaucelles family have maintained the reputation. Bright yellow-gold with floral aromas that contain white summer fruits, honey and a touch of citrus, the rich sweetness on the palate is lifted by natural acidity to give beautiful length and balance.
Port
Taylor's Twenty-Year Old Tawny Port, Douro, Portugal
Matured in oak casks known as "pipes" for a minimum of 20 years, this is a blend of six grape varieties which are indigenous to the high, heat-baked vineyards of Portugal's Upper Douro Valley. Champagnes & Wines
Champagne
2004 Dom Perignon
Named after Dom Pierre Perignon (1638-1715), the monk and winemaker at the Benedictine Abbey of Hautvilliers near Epernay, who is credited with having ďnvented" Champagne. Moet et Chandon's Cuvee Dom Perignon is the most iconic of all Champagnes. Always a vintage wine from 100% Grand Cru vineyards, pale gold in colour with aromas of fresh almonds and white summer fruits, both caressing and precise on the palate.
White Wine
2008 Domaine William Fevre Montmains, Chablis Premier Cru, France
One of France's most famous wine regions, Chablis produces the most classic white Burgundies from 100% Chardonnay grapes grown on a chalky soil that brings a floral raciness to the wine. The 98 hectare Premier Cru Montmains is well-situated on the left bank of the river Serein to produce wines with a distinctive elegance and length of flavour, particularly in an excellent vintage like 2008.
2012 Kooyong Chardonnay, Mornington Peninsular, Australia
The cool maritime climate of the Mornington Peninsula south of Melbourne is particularly well suited to growing chardonnay of exceptional quality. Made by highly acclaimed winemaker Sandro Mosele, this wine successfully combines freshness with complexity and is a fine example of the new wave of Australian Chardonnay that is attracting so much international attention.
Red Wine
2007 Chateau Cos d`Estournel, Saint-Estephe, France
With 65 hectares of superbly situated vineyards that adjoin those of Chateau Lafite-Rothschild in neighbouring Pauillac, Cos d`Estournel is one of the only two estates in Saint-Estephe to be classified "Second Growth" in 1855. The wine is known for its intense Cabernet Sauvignon fruit blended with carefully selected Merlot that adds a touch of richness and roundness. 2007 was a vintage where the best wine came only from the best terriors which provide optimum ripeness, witnessed in its deep colour, aromas of crushed summer berries, a succulent concentration of flavours on the palate and a firm, elegant finish.
2011 Penfolds RWT Shiraz, Barossa Valley, Australia
Penfolds best red wines are revered the world over, as is their Chief Winemaker Pete Gago - the company dates back to 1844. RWT stands for "red wine trial" an experiment to see what would happen when the wine from old Barossa Shiraz was aged in French rather than American oak barrels. Since the first release in 1977 RWT has became is an iconic collectable of great reputation and quality.
OR
2012 Teusner Albert Shiraz, Barossa Valley, Australia
Over time the colour turns from dense purple-red through carmine to orange-tawny, the fruit retaining its rich, raisiny concentration and refining into a nutty, spicy, honeyed finish, a taste to linger over. Taylor's was established in 1692 and remains the most famous name in Port.

Teusner is an exciting partnership between winemaker Kym Teusner and Michael Page the cornerstone of which is their reverence for low yielding, old, dry grown Barossa vines.
Champagne
Champagne Taittinger Prelude "Grands Crus", France
One of the rare Champagne Houses still owned and managed by descendants of the founders, Taittinger is famous for its superb "Comtes de Champagne" luxury blend that comes only from Chardonnay grapes. Pierre-Emmanuel Taittinger has now created "Prelude" a 50% Chardonnay and 50% Pinot Noir blend from only Grand Crus vineyards classified 100%. Aged for more than five years in their historic cellars in Reims, its balance of freshness and aromatic expression is outstanding.
White Wine
2013 Mt Nelson Sauvignon Blanc, Marlborough, New Zealand
Marlborough in New Zealand's South Island is home to some of the world's most expressive Sauvignon Blanc wines and this was acknowledged in no small way when Italy's famous Antinori family purchased twelve hectares of vineyard in the heart of the region in 2004. Made by Helena Lindberty, Mt Nelson Sauvignon Blanc is fresh, vibrant and is a fascinating expression of both new and old world winemaking philosophies.
2012 Bouchard Pere et Fils Rully, France
The white wines of Rully from the Cote-Chalonnaise to the south of Beaune, have often been compared to the much more famous Mersault. Both from the Chardonnay grape, Rully has a floral bouquet, summer white fruit flavours with roundness and persistence. Bouchard Pere et Fils are the largest owners of Premier and Grand Cru vineyards in Burgundy and their wines represent the best from this historic region.
Red Wine
2010 Chateau Larose Trintaudon Cru Bourgeois, Haut Medoc, France
The origins of the domain go back to 1719, but it was in 1838 that Henry Delaroze, mayor of Saint-Laurent, created a vineyard on the parcel known as the "tenement de Trintaudon", a magnificent gravelly hillside. It was classified as a Cru Bourgeois Superieur in 1874. This is a classic Bordeaux, with Cabernet Sauvignon (60%) bringing structure, fragrance and fruit; and Merlot (40%) bringing roundness and body. Harvested on the last day of September this is a solid Cru Bourgeois from Haut-Medoc that is balanced with good concentration in this tannic vintage. Young, with cedar and cassis flavors opening, a classic Medoc.
2012 Dandelion "Lions Tooth" Shiraz Riesling, McLaren Vale, Australia
Dandelion is an exciting partnership between renaissance wine man Zar Brooks, his highly acclaimed winemaker wife Elena, and the Lindner grape growing family. The 5% Riesling is a fascinating addition although adding a small amount of white to a red blend is not unheard of in the world of wine. The Riesling softens and adds aromatic lift to the richness of McLaren Vale Shiraz. Intriguing.

2012 Dandelion "Lioness of the McLaren Vale" Shiraz, McLaren Vale, Australia
Dandelion is an exciting partnership between renaissance wine man Zar Brooks, his highly acclaimed winemaker wife Elena. The grapes for Lioness were sourced from Angus and Helen Tuck's vineyard in McLaren Vale. This wine was fermented traditionally in open fermenters, aged predominantly in older french oak barriques and was bottled without filtration. The result is a Gold Medal winning Shiraz from an exceptional vintage.
Port
Dow's Ten-Year-Old Tawny Port, Portugal
Dow's, established in 1798, is one of the oldest Port Houses. From their steeply terraced vineyards of the Upper Duoro, blended from six indigenous grape varieties, the wines age. The wine, bright tawny red in colour with candied fruit and toffee on the nose, nutty flavours on the palate with a warm, spicy finish, is the perfect accompaniment to cheese.

2013 Balthasar Ress Riesling Kabinett, Rheingau, Germany
The Ress family have been making juicy, fresh wines in the village of Hattenheim on Germany`s great south-facing bank of vines called the Rheingau for 5 generations. They have always focused on the fragrant fruit intensity that Hattenheim naturally produces. The grapes for this wine come from vineyards higher up the slope above the River Rhein where it is a little cooler, giving a wine with just a suggestion of the peachy lushness of this natural suntrap, but also the appetizing coolness that the river breezes impart
2012 Heggies Chardonnay, Eden Valley, Australia
At over 500 metres, Heggies is one of South Australia`s higher-altitude vineyards. The cooler growing conditions found at this altitude produces grapes with excellent flavour intensity and acidity. This wine, made by Peter Gambetta, is typical of the exciting "new wave" Chardonnay wines from cooler sites that are attracting so much international attention.

White Wine
2012 Bouchard Pere et Fils Rully, France
The white wines of Rully from the Cote-Chalonnaise to the south of Beaune, have often been compared to the much more famous Mersault. Both from the Chardonnay grape, Rully has a floral bouquet, summer white fruit flavours with roundness and persistence. Bouchard Pere et Fils are the largest owners of Premier and Grand Cru vineyards in Burgundy and their wines represent the best from this historic region.
OR
2013 Balthasar Ress Riesling Kabinett, Rheingau, Germany

2012 Domaine Laroche Chablis Premier Cru La Chantrerie, Burgundy, France
Elegant and crisp, this light bodied wine is a great example of the high quality of Premier Cru sites in Chablis. Notes of blanched almonds mingle with minerals and citrus fruits. This is a lean and refreshing wine with a fine line of acidity running through its core, and is also a versatile Chablis that is wonderful with salads, fish and seafood dishes.

Harvested on the last day of September this is a solid Cru Bourgeois from Haut-Medoc that is balanced with good concentration in this tannic vintage. Young, with cedar and cassis flavors opening, a classic Medoc.
