The map shows direct great circle routings, not actual flight paths. It's perfectly accurate as a schematic representation of traffic between airports, but no, it doesn't mean the airplane is going to fly exactly along the shown path. Not sure if mapping exact routes would even be possible though, since these paths vary quite considerably from flight to flight...
