I don't think I chimed in yet, but on September 1st I finished all 193 on the UN list + 3 more I consider countries based on the fact more than 50% of the UN considers them countries - Palestine, Kosovo, and Vatican City.
All done! Now on to quasi-independent places with South Ossetia, Abkhazia, and Ngorno-Karabakh coming soon!

I'm at 60 countries/regions, according to the "Traveler's Century Club" list which I find reasonable, as it has many separate/interesting regions as separate entities you can check off.
Many of these I have done as quick work trips, but have always managed to sneak a peek at something local in the evenings, or visit an interesting museum, meet some amazing friend-of-a-friends, eat some fantastic local food, or something like that.
The variety of the world keeps amazing me, and I consider myself lucky.
And the fact that normal people everywhere are mostly nice and friendly, whatever the geopolitical situation of the world happens to be at the time.
I think if more people traveled to more places and saw that the "other people" are mostly just like themselves, we would have a better chance of achieving world peace some day. Someone should start a charity that flies young people across the troubled borders of the world to meet each other, that is something I definitely would support.
I have a few more specific places on my bucket list and hope to stumble on many others serendipitously.
I also have many favorite international destinations I return to again and again, they feel almost like home, too.
What a wonderful world we have. The ability to fly "anywhere" for—let's admit it—"cheap" is a really wonderous thing.

Kosovo may be a country depending who you ask. About 60% of the UN agrees it is
Serbia and Montenegro are two separate countries.

I'm working in Yemen right now so if you come through Sana'a you'll have to come over to our compound for a homebrew.
