Why don't all planes disembark from the front and the rear?

What's the big deal? It's SOP at many airports and with many airlines. This year I've had it at JNB CPT STN GOA GVA and IST, flying with SA, LX, TK and FR and on 777s, 330s, 320s and 737s.
