You could fly non-stop just two days ago. Well, now you have you go via connection. You have options either thru Tokyo, Seoul, Frankfurt, Istanbul, London - that's what I know with one connection to SIN from NYC area, I am sure that other options exist as well.

Service wise I'd route through HKG on CX or FRA on SQ. EK through DXB is another good option. Or through TPE on BR. If none of those interest you there are tons of other options through other cities

Lots of choice indeed. I actually don't mind stopping on such a long journey as it gives you a chance to get out and stretch you legs some.
I suppose other things to consider are class of service? Paid or miles? Etc.
I flew from SIN to JFK via FRA on the SQ A380 F class suites a couple of weeks ago. Great service. Great suite. Smoothe, quiet aircraft. The leg between SIN and FRA is about 12-13 hours. Then FRA-JFK is another 8-9.
I've also done CX JFK-HKG a couple of times. In F it's pretty nice and that flight lasts 16ish hours. Then you add on a few hours to SIN. I much preferred SQ but CX F is easier to get with miles and costs a lot less miles.

For both NYC and ORD I recommend oneworld member QR. Here are my trip reports:
DOH<>SIN, J
DOH-JFK/IAH-DOH, J
AUH-DOH-DXB, F including Premium transfer Terminal
DOH-JFK, J
I would strongly recommend avoiding economy class on such a long trip and if you would otherwise travel economy it might be better to look around for the cheapest business carrier, even if there is an extremely long stopover.

From ORD on *A, TK through IST could be good if the connecting times work well. Their coach is considered good. Asiana would also be a good choice, as well as SQ, although SQ is likely to be more expensive as well as require an additional connection.

Interesting, I ditched ANA for JAL due to the latter using 787s when I visited Japan for the first time a few months back. Good to hear that the competition is catching up.
