Me and wife are flying SFO-HKG-SIN-DEL (First Class) for the first time. We were looking at the BTC options. Kinda overwhelming. Does this look good enough?

Me(No Beef):
SIN-HKG (Supper):Boston lobster thermidor
SIN-HKG (Breakfast):Inflight Meal
HKG-SIN:Chicken and scallop congee (or is the Inflight Meal better)
SIN-DEL:Curry pata lobster

My Wife(Vegetarian):
SIN-HKG (Supper):Vegetarian Indain Meal
SIN-HKG (Breakfast):Toasted multigrain bread
HKG-SIN:Vegetarian Indian Meal
SIN-DEL:Inflight Meal (Sahi Gulab Paneer/Prune Kofta)

I'm flying SIN-DPS and have a lot of BTC options for brunch service. I've heard good and bad things about the lobster thermidor, with general consensus that it's better to have the "boston" version over the "classic" version. The Dim Sum might be good too, but honestly I have no idea what a lot of these even are. Any pointers?

It's by no means exhaustive but should give you a few pointers.

I actually need to update it since I've been on a few more flights since then

nice blog, i've added you to my favourites. And I enjoyed your Joie by Dozo review. I loved that place when we were in Singapore a few years ago and cant wait to go back over new year when we return.

Looking for suggestions for book-the-cook.
The options are:

-Grilled free range chicken with fettuccine pasta and wild mushroom sauce
-Peppered fillet mignon with mustard jus, chanterelle mushrooms, fava beans, and paprika red potatoes
-Seared Chilean bass with creamy saffron sauce, baby vegetables and wild rice
-Steamed crab ravioli in creamy lobster sauce with mixed vegetables
-Beef Sukiyaki with steamed rice
-Prawns with preserved cabbage, sugar snap peas, and steamed rice
-Stir-fried pork with wood ear, enoki mushroom, bell peppers, and steamed rice
-Sweet and sour fish with fried noodles
-Wok-fried black pepper chicken with carrots, zucchini, gingko nuts, and steamed rice
-Toasted multigrain country bread with herb cottage cheese, grilled vegetables and fresh berries low fat yoghurt (Breakfast only)

I'm on the same route/menu for mid-December. I've never flown SQ before so I can't say anything more than what I chose:

Dinner: Inflight Menu (reviews have said the steak is good)
Supper: BTC wok-fried black pepper chicken
