north: About 15 miles or so north of Fairbanks, AK, wherever that road turns to dirt.
south: southern tip of New Zealand
probably not as meaningful, but...
east: Cologne, Germany
west: Pokhara, Nepal
though have gone to Asia twice over the Atlantic rather than Pacific.

My entry is not much better:
Northernmost - Vancouver, BC (49+ degrees North)
Southernmost - Singapore (1+ degrees North)
In Europe, I've been to Paris and Strasbourg, which are just south of the 49 degree parallel.

North - just north of Arctic Circle at Rovaniemi (approx 67N).
South (by air) - just north of Ross Ice Shelf, Antarctica (approx 76S).
South (by land) - Bluff, NZ (approx 47S).
Plenty of FTers have gone closer to both poles than that I am sure.

Northernmost: Longyearbyen, Svalbard 78'13"N (bet not many people can beat that!!!)
Haven't crossed the Equator, so my Southernmost isn't anything special - Caracas, Venezuela if half an hour in an airport terminal counts, Port of Spain, Trinidad if it doesn't.
