Hi,
travelling with my partner AA SJC-ORD and then RJ to AMM. Have a 7 hours layover in ORD. Since my partner is PLAT, we can access lounges (yay!). Which is one is better at ORD? We were thinking about BA all the way. Any opinion?

The BA First/Terraces lounge is T5 between M11 and M12.
IIRC RJ departs out of T5, that being the case i would just go to the BA lounge since you will be closer to your departure location.

If you get drink chits, then the T3 H/K AC has a better and more varied booze selection than the BA Terraces lounge in T5. I'd suggest a drink or two there and a shower if desired, before heading over to T5. Remember to give yourself enough time for the unnecessary extra "security" check at T5.
7 hours at ORD is a borderline eternity, even if one has access to the AA FL or BA F lounge. Perhaps take a ride on the Blue Line into Chicago for a few hours since you have to leave "security" at T3 regardless?

You'll land at T3 - there you have 2 lounge options - the H/K AC and the G AC.
Over in T5, which you have to pass thru "security" to access, you have one lounge option - the BA Terraces lounge. If you wish to return to T3, then you must pass thru "security" once again, possibly receiving additional harassment due to your RJ flight being out of T5.

As for showers, I can't imagine needing a shower after a SJC-ORD flight, so this should be irrelevant.

As such, AA and the other OW carriers should offer airside transit to all OW passengers at the very least.
One "security" check per trip direction is more than enough.

Not really. Or,more accurately, one hop. When you arrive in T3 you will have access to lounges there since it is a domestic flight. Once you leave T3, though, you may not be able to get back in since you don't have an onward flight from T3 (depends upon how strictly this is enforced). You will then have access to T5 only.
As for showers, I can't imagine needing a shower after a SJC-ORD flight, so this should be irrelevant.
