From a fine 50-hectare estate on the famous gravelly soils of Pessac-Leognan where the rich fruit of the Merlot grape dominates the firmer backbone of Cabernet Sauvignon, with a touch of Cabernet Franc and Petit Verdot to add aroma and grip, the hand-harvested, oak-aged La Garde's deep ruby colour leads to aromas of blackberry and blueberry and an impressive freshness and depth of fruit on the palate. 2010 St Hallet Faith Shiraz, Barossa, Australia
The Barossa Valley in South Australia is synonymous with Shiraz, and is internationally famous for full-flavoured reds with distinctive spicy mocca characters and soft ripe tannins. St Hallett and their winemaker Stuart Blackwell have played a major role in the promotion and appreciation of the region's "old vine" Shiraz vineyards. Faith is a draw from a number of vineyards across the region and is an excellent exampkle of the Barossa style.

2006 Dow's Late Bottled Vintage Port, Douro, Portugal
Dow's, established in 1798, is one of the oldest Port Houses. It owns two superb estates in the Upper Douro - Quintas Senhora da Ribiera and Bomfin - which form the basis for this splendid vintage 2006, bottled unfiltered to preserve all the fruit in late 2011, after maturing for five years in the large oak casks known as "Pipes". Deep crimson in colour, with a nose of black berry fruits and spices, full and plummy with very long-lasting rich flavours on the palate, a perfect end to a meal.

Singapore to Hong Kong (SIN-HKG) on Singapore Airlines 777-200 in business class

After a day in Singapore I had an onward flights through the night. Firstly to Hong Kong. Singapore Airlines has a variety of aircraft types on this route, which works out well for me because the 77W and A380 both have hefty surcharges. For such a short flight the better seat and infinitesimal chance of an op-up are not worth paying the extra for. Also the schedule worked better with this flight - the better aircraft (for seating) would have resulted in a lengthy transit at Hong Kong.

I'd hoped to get some sleep on this short flight but did not manage to. Oh well, I have several more flights over the next day or so to catch up on sleep.

2010 Weinhaus Ress Rheingau Riesling, Germany
Weinhaus Ress of the famous Balthasar Ress estate has produced this wine to the expectations of international connoisseurs, balancing fresh flavours, low acidity, and making it a light style Riesling. Although 2010 was a very low yield vintage, the great care taken transporting the hand-harvested grapes directly into the wine press, enabled the wine producers to arrive at an exquisite wine displaying green apple aromas, lively fruit, racy acidity and a touch of distinct minerality. 2009 Marchesi de Frescobaldi Tenuta di Castiglioni, Toscana IGT, Tuscany, Italy
This ancient 150-hectare estate in the Colli Fiorentini south-west of Florence, that has been in the Marchesi di Frescobaldi family for 900 years, is planted principally with Cabernet Sauvignon, Merlot and Cabernet Franc grapes from Bordeaux, with just 10% of the local Sangiovese, famous for the historic wines of Chianti. 2009 was an excellent year in Tuscany, producing deeply-coloured wines with a fine intensity of red and black berry fruits on the nose, a mouth-filling smoothness of flavour and a long finish.

Hong Kong to Seoul Incheon (HKG-ICN) on Asiana 747-400combi in business class (first class seat)

Transfer security at Hong Kong was busy but quick. Since I had a couple of hours until boarding I headed to the other end of the terminal to visit the Thai lounge before it closed, and afterwards used Asiana's contracted lounge - gate 16 / Dragonair lounge.

I had a shower in an attempt to stay awake and not miss my flight. It wasn't very pleasant as the shower room is small and overly humid and hot. I felt sleepier, and stickier, afterwards than if I'd had no shower at all.

So instead I had coffee, lots of coffee. That won't help me with sleeping on the red eye but first I had to make sure I actually caught the red eye flight.

There have been times when this flight has had first class sold, but not when I booked or flew this trip. Thus those in the know, and who book earlier enough, can select a first class seat before they are all taken.

Boarding was fast and we pushed back a little early, meaning we'd also have a very early arrival into ICN (which means a longer wait for transit desk to open so I can check in for my onward flights).

The coffee had done the job too well and so I opted for some drinks and nibbled the supper meal. Most passengers go straight to sleep and this flight, which I've flown several times, in my experience consistently has the fastest meal service after departure of any of the hundreds of routes I've flown. The food and drink comes out so quickly I can't help feeling that plating occurs while on the ground even though it cannot.

I think I managed about 20 minutes of dozing towards the end of the flight. Dang.

Seoul Incheon to Singapore (ICN-SIN) on Singapore Airlines A330-300 in business class

Transfer security was surprisingly slow at this early hour. There are quite a few flights that arrive before 5am. The train to satellite terminal was running. Since Singapore Airlines uses that terminal their transfer desk is in the satellite. I had expected I might have to hang around in the main terminal for a while. However, the transfer desk was unmanned, and the lounges were yet to open. I wandered a bit and ended up watching some football with a group of insomniac travellers.

Eventually the Asiana lounge opened (at this stage Singapore Airlines had yet to open their own lounge in the satellite terminal). On the basis of my eticket and OZ status card I was welcomed into the first class lounge. This is an unpublished benefit because the website indicates the benefit is only available when flying OZ, but I've had this on SQ and TK also.

I had some coffee and caught up with messages while waiting for transfer desk to open. A brief visit to the transfer desk to collect some more boarding passes, and then I returned to the lounge to await boarding.

I enjoyed the flight as usual, and managed to get a few hours sleep, which is about perfect allowing for my onward flight to get a decent sleep also.

This ancient 150-hectare estate in the Colli Fiorentini south-west of Florence, that has been in the Marchesi di Frescobaldi family for 900 years, is planted principally with Cabernet Sauvignon, Merlot and Cabernet Franc grapes from Bordeaux, with just 10% of the local Sangiovese, famous for the historic wines of Chianti. 2009 was an excellent year in Tuscany, producing deeply-coloured wines with a fine intensity of red and black berry fruits on the nose, a mouth-filling smoothness of flavour and a long finish.

2006 Dow's Late Bottled Vintage Port, Douro, Portugal
Dow's, established in 1798, is one of the oldest Port Houses. It owns two superb estates in the Upper Douro - Quintas Senhora da Ribiera and Bomfin - which form the basis for this splendid vintage 2006, bottled unfiltered to preserve all the fruit in late 2011, after maturing for five years in the large oak casks known as "Pipes". Deep crimson in colour, with a nose of black berry fruits and spices, full and plummy with very long-lasting rich flavours on the palate, a perfect end to a meal.

Singapore to Christchurch (SIN-CHC) on Singapore Airlines 777-200ER in business class

I had a few hours in the first class lounge in between flights. Plenty of time to shower, have some drinks, run into friends and acquaintances. The 2 computers in the first class lounge were both in use when I wanted to use them so I slummed in the business class lounge business centre for a while.

Most times I've taken this particular flight the departure gate has been B8, which is as far from the lounge as you can get and still be in T3. Today we had a closer gate. There was a delay in boarding so that even though I left the lounge with just 20 minutes to departure boarding had only just commenced when I got through security.

On an otherwise full flight I had the one empty business class seat beside me. More space to spread out. Somehow I managed to keep awake through meal service and struggled to sleep despite the tiredness. I eventually fell asleep nearing the Australian west coast, and thus only got a few hours sleep and remained with a sleep deficit. On flights from Singapore to Christchurch I try to wake up over the Tasman Sea because the views of the Southern Alps for the approach into Christchurch are spectacular. Even when there is some / considerable cloud (which is typical) there usually are either peaks peeking above the clouds or clearer skies just to the east of the main divide.

Tailwinds were weaker than usual so we arrived slightly late. With a fast walk to immigration, use of smartgate and no checked bags to collect, I was first to customs and got the "testing the system" xray check. Low risk passengers (such as aussies and kiwis with no warning signs on their arrival cards) generally don't get their bags xrayed.

Incidentally, this route is one of the most unbalanced ones I have flown; in that I have only flown CHC-SIN once but SIN-CHC several times. This is mainly due to schedules, it can be difficult to get to CHC early enough to comfortably make the connection (and there is no margin for error for weather delays), whereas the AKL-SIN daytime flight leaves a few hours later (and there is also the redeye flight out of AKL).
