Welcome to flyertalk DestiTout!
Lately we've had new users post their first post on our forum, which more or less consist of bashing SAS (usually things that we all know about) and then recommend using a different low cost airline.
I'm an optimist, so I look forward to your positive contributions in the future.

Best you can do is try to either take a picture or get a name (if they wear a name tag) and publish the experience widely on their facebook feed. Do it constantly when something happens, make sure everyone does it. See how fast things are solved then.
Alternatively, fill out a complaint form for every single irregularity you encountered with as many details as you can. It also works in waking them up.

It is also pretty well known that you will not get a seat assignment until online check-in for economy (go) fares. It has probably been that way for 10-15 years. And it is the same for other airlines intra-Europe, e.g. Lufthansa.

Anyway, almost all crews handed out free water on my last flights.

The *G desks at CPH surely has some bad apples. I haven't been yelled at but a few times been met with passive-agressive attitudes. Like refusing to utter a word, throwing passports on the desk, rolling eyes and loud sighs if you ask for something simple, like checking FF# is entered into booking. Also, on spite, checking bags to wrong destination on multi-segment ticket (I know it was on spite, since I made it clear where bags should go).

I have experienced only coffee and tea served and on other flights also water. On CPH to TXL only a can of juice were served and no option to buy.
But I don't care either way, I always buy water in the airport to bring on flights.
The few times I check in luggage, I have always been treated nicely and likewise at the gates and on board. But then again I am not Gold, so maybe I don't expect as much from staff as some of you do.......

One tip: bring an empty bottle through security and fill it airside. That's much cheaper and usually the quality is just as good: most airports even have a drinking water fountain there. I've done that a lot when I was still a student and it saved me lots of money. And I'm still alive...
When it comes to being treated in any way, I think we're all Scandinavian enough here to understand that we're not special. Most of the high tiers here just want an uneventful and smooth flight experience, as 'events' usually have a negative connotation. In the LH Miles & More forum there is even a thread spent on those 'do you know who I am!?'-status pax and they're being made fun of big time.

Btw.: I'm German and the Scandinavian mentality including understatement, thinking of equality and decency is a huge contributing factor why I moved here some years ago - still don't regret it a single day.

Ok, that's really cheap and thanks for the tip, I'll remember that. We in OSL pay something like 20 or 25 NOK per 0,5l bottle.
ps. Despite living near OSL, I'm not a Scandinavian either. I've been living here for many years though.
pps. Interesting though to see how apparently different airlines attract different crowds. I wouldn't have expected the BA forum to be bragging about DYKWIA.

Take CPH-Berlin, where SAS doesn't have time to serve coffee, whereas Air Berlin on the very same route has time for serving everyone free drinks and snacks, and easyJet even offers warm snacks and has time for dealing with payments. Or take domestic Denmark where there for some reason is plenty of time for serving coffee. I really don't get it ??

You're right, I shouldn't blame the crew. But I'm still wondering, why other companies can do it, and why the same company can do it on even shorter routes. Strange instructions in my opinion.

I experienced the same kind of service on the LH flight PRG-MUC and the OS flight PRG-VIE. You just get a snack (like a chocolate bar) at the aircraft door and a sealed cup of water or juice in flight. I'm actually very impressed that EZY and AB manage to get a full round of service done at such a short hop.
