There's no Jewish presence in the Maldives.
If kosher food is critical, what the resort can do is import frozen ready-meals from a supplier in Europe or Australia (as well as new chinaware, cutlery etc) but this may not be the luxury experience that you're looking for.

i stayed in the taj excotica and they got me glatt kosher food from Australia.
they sent me a menu beforehand and i chose from the menu and they ordered in the food from Australia. the food wasnt chaep as even the none kosher food in these resorts are very expensive but it was edible.

There really wouldn't be any place for Chabad to operate. Maybe they should start a kitchen boat to make deliveries to the islands.
