Winging it on NZ's SI in Nov?

Next week we leave for 10 days in NZ, most of which is on the South Island. Currently, we have bookings for our first and last nights, but we're hoping we can freelance our accommodations for the rest of the trip. Our itinerary starts in Nelson and works its way down the West Coast to Queenstown/Te Anau.

So far, most of the places we're interested in seem to be open on the days we "think" we will be there. What are people's thoughts on "day of" availability if we choose to stay flexible? In general, we like nicer places and we're somewhat picky, but a dog or two wouldn't necessarily ruin our trip...

Should be okay. It is low season. Too late for winter stuff, too early for summer stuff.
