More than 6 legs and possible problems

More than 6 legs and possible problems
I am taking up on this journey in second week of January.
1)ORD/IAH/ORD
2)ORD/LAX/DFW/HKG/DFW/LAX/ORD
3)ORD/MCO/ORD
These are all back to back and i am kinda scared of IRROPS. AA system did not let me book more than 6 legs so i had to separate i guess. I have some questions
1) is it possible to book more than 6 segments?
2) From your experience , i gave myself a day in ORD in every stop do you think it is enough?
3) where do you see a problem from this itenary?
