Waiting until the last minute (and going into Christmas and New Years) it is going to be a lot harder to find something decent. Perhaps if you're willing to fly on Christmas or New Years Eve, you might find something. Sorry I can't be more helpful. You might also see about flying out of another larger airport, to get a better deal. It's too bad you didn't start searching a month earlier, as there are tons of $98 and $118 fares out there, if flown/booked earlier.

You got one more week, and it's a busy one.

Delta has BNA-SLC-ANC-SEA-ATL-BNA for $716 on ITA. Out on 12/29, back on 12/30 or 12/31. Some variations exist, try Kayak or Orbitz.

Didn't get it quite to your maximum, but here's an all-in for $645.80, traveling the 24th through the 26th, with Christmas Eve back in BNA and a 7-hour overnight Christmas night in California (I assume you could stay at the airport). I'm not sure that I would do this kind of thing anymore, but with a 500-mile per segment minimum, this would give 7764 miles, according to Flying Fish.
