Clearly as mentioned, Jul 3 - Jul 12 are dates that work.
Other dates Jul 3-Jul10, Aug 21/22-28/29. Some 580s in Sep/Oct for a nice Autumn trip to Korea if you prefer.

Note that this involves overnight change of airports in Shanghai, which are about an hour away from each other.

Looks like China Eastern metal (Skyteam) for scattered dates through the summer.

Anyone been to Gimpo, South Korea before?

It's actually the closest international airport to Seoul. I prefer it to flying into ICN since it is closer to the city and the security line is shorter.

I flew a similar itinerary on China Eastern last month: SFO-PVG & SHA-GMP on the outbound with a 23 hour layover to check out Shanghai, and ICN-PVG-SFO on the return (for only $379 r/t ).

Getting to & from downtown Shanghai to Hongqiao Airport (SHA) is cheaper and easier than the trip to & from PVG; using Line 10 of the metro, just be sure to get off at the older Hongqiao Terminal 1, where the international flights depart.

GMP is definitely the preferred airport for getting to & from downtown Seoul; it's quick, easy, and inexpensive via the metro.

If you have to fly out of ICN on the return, check out Airport Limousine #6002; it's a tour-style bus with limited stops that runs every 15 minutes, and costs less than $9 one way (10,000 KRW). It takes about an hour plus or minus 15 minutes depending on traffic.

Second the Limousine Bus. There are quite a few routes depending on where you are in Seoul, and they do go to Gimpo as well.

I think that is the same as Kimpo, which was the international airport SEL, before ICN was built.

You can easily hop on the subway right there, and be in town for about $.50 or so.

Giving yourself 45 minutes more than you normally would will serve you well when flying out of ICN and taking the limo bus to get there (traffic and security lines can make for unexpectedly long point-to-point travel).

GMP is great and yes, you can take the train right into the city. Easy.
