You didn't do a thorough search, there's the Hyatt Regency Manila

For the rest, you'll have to wait a while...

The Westin Manila Bayshore: opening in mid-2015 (in Resorts World Bayshore, near the Solaire Resort & Casino, not too far from the Mall of Asia)
The Sheraton Manila: opening Jan 1, 2017 (near the airport in Newport City)
The Conrad Manila: opening mid-2015 (adjacent to the Mall of Asia & SMX Convention Center)

(I believe Carlson properties are located outside of Manila, in Davao and Cebu.)

Note: opening dates in the Philippines are highly subject to change. For example, in 2008 the Fairmont Makati was set to open in 2010, in the end it opened on December 4, 2012.

Yes, there is a Radisson Blu by SM Mall in Cebu and a Park Inn by SM Lanang in Davao. Both reasonably good properties.

Over nighting in Guam will be easy. Hotels aren't great but its pretty safe and easy to get around. I don't know if you will be able to hang around in the terminal until the UC opens, never tried it.

I've transited Guam, arriving while the UC was closed, I just waited in the food court (by the duty free shops) until the club opened.

is this fare gone? I can't seem to find it on ITA (cheapest I can see for late Oct is $955). It wold be nice to visit the in-laws for a few hours

edit: and that's not even UA. the cheapest UA I can find is like $1400 from NYC to MNL and back

I can see $1038 on UA. Didn't do much research though so should be better deals also. Look on google flights

Forgot to mention the new Hyatt City of Dreams Manila (approx. 4 kms/2.5 miles from the airport)

As of today, they are accepting reservations from December 15, 2014 and onwards.

Staying at Hyatt in both Guam and Manila. Anyone know whether there is shuttled from/to airport from the hotels?

Yes. Used google fights to find routing and best fare and then just clicked through to buy in united.bomb site
