Take a hop-off, hop-on tour bus (can't remember the company name). It'll get you to all the major sites, plus you'll learn about the city from the guide.

Go drive a dune buggy in the desert. Trust me, it is a lot of fun.

That or go take in a few races at a camel track; you'll be surprised at how fast they can run.

Whatever you do, don't eat in the hotels. Highly recommend lunch at least once in Deira section of town, in the Iraqi or Iranian sections of that part of town. The Al Baghdadi Restaurant on Al Riggi Road has the best kabab in Dubai. Or have the fire roasted roaho fish, a national Iraqi dish. One of the best fish you will ever have.

If this is your first and only time in the middle east then mix in your camel rides and shopping in the local markets.

However if you have been to middle eastern countries and this is not new to you, then skip the local flavor and go see the modern sites.

Go to ski dubai, see the malls, have a meal at Burj Al Arab (only way to get in cheap), see the burj dubai (tallest building in the world). I have been to quite a few middle eastern countries and Dubai is so amazingly modern, almost unlike anywhere else, that you should go there to enjoy that for a quick trip.

See the islands, go to the atlantis hotel and the water park.

If you have already eaten hummas and arabic bread then skip the local flavor and amaze yourself with what they have created.
