Oh Lord, don't end up at either, please! You will never return to that area if you do!

If you must stay in Monte Carlo, then go to Le Metropole and discover what this part of the world is all about.

Elsewhere, avoid Nice at all cost. Nowhere good to stay these days. head for the hills instead.

Hôtel Le Cap Estel is a bit Russian these days, so not the best option any more.

Château de la Chèvre d'Or has great food but awful rooms and suites with very hard beds.

Château Eza is tiny but cute - right at the top of the hill in Eze Village.

In Grasse (or rather overlooking Grasse), Hôtel La Bastide Saint-Antoine is superb - Jacques Chibois' amazing food makes this a must. Rooms and suites, too, are very comfortable and well designed with great bathrooms.

In Mougins, which is a tiny but beautiful village up in the hills, the best by far is Le Mas Candille & Spa - wonderful views, very comfortable rooms and suites, either in the main Mas or one of the 2 annexes, good spa, great food.

Le Mas de Pierre is just outside of Saint-Paul-de-Vence and is by far the best option in this area. Not too far to drive down to the coast either and you have the beautiful medieval village of St Paul de Vence just up the road.

In Vence, Le Château Domaine Saint-Martin is part of the Oetker Collection, so service is excellent. Beds tend to be hard but it's not a bad option.

I have stayed in this region in January and the weather was cold but sunny - very pleasant indeed.

True, but Cap Ferrat was not AS Russian as Cap Estel, which is, as you say, wholly owned!

In Nice we had several great stays at the Palais de la Mediterranée. The penthouse suite on the last floor are great. In December we will try le Grand Hôtel du Cap Ferrat.

Thanks for the tip! We will check it out. Was it a Hyatt when you stayed? Or is this something new?

I assume you are aware the Grand Hôtel du Cap Ferrat closes for winter on December 16.

Last time we were at the Palais de la Mediterranée was back in 2011, at that time it used to belong to Concorde group I think.

We will stay at Cap Ferrat the first week-end of December (7/8).
It shall be almost desert I guess but we need some rest and seclusion lol.

City properties are more likely to be open year round. Look for hotels actually within Nice, especially upscale business hotels that also have some resort facilities. Monaco/Monte Carlo (two very nice palace hotels next to the casino) and Cannes are other possibilities.

Several major hotels in this area have recently become Hyatts, IIRC including one of the icons in Cannes and Palais de la Mediteranee above Nice.

If you must stay in the city,the Palais de Med is still the best of the bunch there,albeit a Hyatt now.It is a large feeling hotel,but quite nice,not as nice as the ones out of town but nice.
We've stayed at the Metro pole too and concur,it's the choice for Monte Carlo.It has an absolutely divine 2 Michelin star Japanese restaurant.
Rooms and service are top notch.

To be brutally honest, most of the 5 star properties in MC, NCE, Cannes and Cote d'Azur in general are quite poor compared to their price point. As others have mentioned, the Fairmont is a absolute non-starter for most. Also the properties in Cannes (Martinez, Carlton, Majestic) are really poor hardware wise considering the cost. (As in - absolutely disgraceful). In recent years private Villas are really the best option if you want something thats not 1980's style @ 2k euro a night.

I havn't been to - but have heard good things about Terre Blanche. Even though its not a FS anymore. Considering it for this summer with the kids. Hardly an Aman though ;-)

Did you like the food at the Japanese ? IIRC it's only one michelin star
