I'm just back from Provence, and stayed at both Domaine de la Baume and La Maison Sur La Sorgue last week. My experience:

Domaine de la Baume: had the best food of any place we stayed. Dinners outside, with infinite dusk views across the valley and hills, were a trip highlight. Service was very, very warm and friendly, also the best we experienced. Interior decor is very of the place, although some of the interiors are cheaply done (thin, painted boards). The swimming pool has not yet been updated since it was installed in the first half of the 20th century, and does not appear to be cleaned regularly, as it was full of bugs, so unusable for us. They recognize that they need to install a new pool. The cascades on property are beautiful, worth the 5 minute walk into the woods.

La Maison Sur La Sorgue: The best breakfast of any place we stayed, with beautifully designed tableware. The owners' collection of art from around the world especially Asia, makes this a really nice place to stay. And the Sunday market was by far the best we saw, not full of touristy junk like so many. My major misgiving was no showed in the bedroom, just a tub with a hand held, so you have to squat in the tub, or else water sprays everywhere. Nice, but more of a 4-star place.

My favorite hotel of the trip was the Maison D'Uzes, which was superb on every single level -- location, upkeep, decor, service, food. And Uzes is just beautiful, within a short drive of the amazing Pont du Gard.

Big disappointments: La Mirande in Avignon was awful, just awful -- unclean and tired rooms (hair everywhere in the bathroom), the worst service, and an utterly inattentive front desk, where one person was always talking on the phone, while the others sat and refused to make eye contact. We couldn't even get to the hotel because it requires a phone call to lower a gate, and their phone was accidentally off the hook, so I had to walk to the hotel to get them to address it. La Mirande's only redeeming features, in my experience, are its location and its lovely garden for breakfast.

I've been slumming it through Russia on the Trans-Siberian Express and then will go stay in a tent in Northern Mongolia for a bit, but then on my way home:
Park Hyatt and St Regis Beijing
Park Hyatt, the Royal Meridien and Twelve at Hengshan in Shanghai
...Some less remarkable hotels in Seoul including the Westin Chosun which was mentioned here

I'd love to see a trip report on your Trans-Siberian Express journey and Mongolian tent experience! I'd wanted to visit Mongolia on our China trip but couldn't fit it in.

I would have chosen only Aman whilst in Tokyo if it were not for reviews like yours. Thought we'd split it instead in order to not feel too disappointed if it hasn't improved.
