I was told they don't usually stock both but they now do. Which champers should I get?
And do they pop a new btl mid flight after a few hrs of noone ordering?

I would any day say Salon over Dom, but Dom is more a mass market product (if you can allow yourself to call it that) made to have broader appeal so there will be people preferring it over the Salon.
