Having been to Mumbai several times, my advice would be to do the usual tourist things in South Mumbai, and perhaps go to their state park. That said, it's not seven days of activities. You might consider a day trip to New Delhi. There are a lot of places to shop in Mumbai, if that is interesting.

your travel dates make adiifference in suuggestions people here may offer.

June second week to early September is momsoon in Mumbai
April-May can be very hot.

Your interests and prior exposure to emerging market countries/conditions as well as travel style can impact suggestions too.

Ajnta of Maharashtra. is the best place. You can also make your tour trip for golden triangle tour in Northern Indian which covers Indias top most tourist places as Delhi, Agra & Rajasthan.
For making golden triangle tour, you can contact at IRCTC Tourism services.

Seven days is a lot for Mumbai along, that should take you atmost 2 days.

Depending upon what your interests are best option would be either to head to Gujarat (North of Mumbai) or to Goa (South of Mumbai)
