MAD-SCL in J -- IB or LA?

MAD-SCL in J -- IB or LA?
Can someone help with this?
I think these are the only two airlines that fly non-stop MAD – SCL. I have flown IB in J several times across the north Atlantic and find it…acceptable. Food ok, but never outstanding. Very good wines. Slow service that gets the basics done but nothing more.
I have never flown LAN, but from what I read, it is also…acceptable. Decent but not great food, good wines, and service that can be hot or cold, depending on the route and day.
I think that the tie-breaker for me is the configuration on the 340-600. LAN 2-2-2 so you always have a seat-mate, with no barrier between you. IB 1-2-1 so if you can snag an aisle you have some privacy.
Would appreciate hearing any opinions. Also, other routings if these will result in better service or $avings.

Starting in Madrid fare are as follows:
IB €3200 incl taxes
LA €4300 incl taxes
Starting in Amsterdam
IB €2342 incl taxes 7 days minimum
LA €4000 incl taxes
Starting in LHR:
IB €2550 incl taxes 6 days minimum
LA €3500 incl taxes 7 days minimum
Cabin Iberia is most probably preferred, and also keep in mind booking the A345, that is the new J class cabin onboard.
Have checked fares from ex-BRU/CDG/DUS/FRA more expensive.\

Very helpful!! Many thanks. It is often (with BA, for example) cheaper to book from MAD than from LHR, even if I am routed via LHR.
But clearly not in this case, as IB and LA have a captive audience here in MAD.

Dutch -- I assume that, if I start in Amsterdam, I will be routed through Madrid anyway?
Yes -- Looked it up. Outbound on 340-600 and return on 340-500.

Yes, you will be routed through Madrid.
Adding some info I forgot.
The sales fare (farebasis IOFRTGB) from LHR is valid for travel commencing on/after 25dec14 and on/before 30sep15, reservations made on/before 27jan15.
Fare from Amsterdam (farebasis INLIB1OF), valid for travel commencing on/before 31mar15, reservations made on/before 18dec14.

This makes it a bit tight, since my travel dates have not been set yet, but the much lower fare from Amsterdam will probably still be the case when I do book.
