Hutong, 1 Peking. Bit "touristy" but amazing views. http://hutong.com.hk/
I am interested finding something with a view/ambiance, and took note of this post...until I found THIS page:

And at the risk of double-posting, I went to a very new Spanish Tapas restaurant last night, which is in its soft opening now. Excellent food, service and ambiance and it won't break the bank. It's called Timon and it's just a few steps up the hill on Ship Street. ^

I looked at the restaurants on the hotels website (http://www.hongkong-ic.intercontinental.com/dining/), and it looked like only SPOON had views. And it looks like that is French cuisine; I'm looking for Asian while in Asia! :-)

Don't forget to ask about dining discount offered to hotel guests.

I grant you that good restaurants in 4.5-5 star hotels tend to be on the higher end. I'll just say that, in HK, there are great dining options to be had inside hotels. It's different than places like Japan and many US cities where you'll find both the best food and the best value outside of hotels. Particularly with regards to dim sum, most of my favorite places are inside hotels. And my impression is that hotel dim sum is not any pricier on the whole than the places outside, when you compare apples with apples. For example, Fook Lam Moon costs about the same as IC's YTH, and costs more than Peninsula's Spring Moon (our favorite).

The Country Club is on the South side of HK and is a private club, as well as the Jockey Club parts of the building at the tracks.

Sorry if I bring up the IC again, but I want to be sure I get it right:
My priority is the best possible view but I'd like to avoid eating French cuisine if I can. Will the views at Nobu and Yan Toh Heen be equally impressive as at Spoon or less so?

I would give the title of the better view at all IC restaurants to Spoons over YTH, having dine at window tables at both.
You have unobstructed harbourview at ground level with YTH.
I would get a high level harbourview suite and order in room service off the YTH menu.

I think that's where our HK friend goes sometimes. The dim sum there is supposed to be excellent. Sadly, I've not been invited.
