I'd recommend you look at a few maps and get a sense of where the various districts are. In general terms no where is very far in HK. If you travel for more than an hour you have either been stuck in a lot of traffic or gone a long way! Public transport is cheap and taxi's are inexpensive.
If you want opinions on hotels you are going to need to let us know your budget. Given you want to stay over Xmas / New Year things are unlikely to be cheap.

I'll be there at that time too - I have already secured something on award points - it's PITA to think about cost of hotels in HK.

I really like Causeway Bay - you're central enough to be able to get to Kowloon side, the Peak, Stanley etc. You're also bang in the middle of a really vibrant shopping district and just a few minutes from Central if you want to get there.
The Excelsior is great - Trivago is showing me an outfit called http://www.clever-hotels.com (admittedly I've never heard of them) who have it for your dates for £139/nt (so just a shade over US$200) incl all taxes

2) not central is fine as long as it's like within 20-30 minutes of MRT ? Is that a reasonable time to travel on the MRT ?
3) Budget is about $100-200 usd per night 4-5 star preferably. Budget can stretch just want a good deal
Okay, I get you want a good hotel at a great price, and are willing to travel a bit, that gives you hotels outside the main tourist districts. Here are some you can consider and check their prices. Hyatt Sha Tin, East, L'Nina, Royal Park.
If you're okay with buses, you get more choices - Le Meridien, Courtyard Marriott, Harbour Grand.
And don't overlook the Langham Place in Mong Kok.
All these are 4-5* hotels that are less expensive due to their inferior locations. But you can get from any of these to the city center in 30 min.
