Instead of Coburg, go to Bamberg and save a 30 minute drive along the way. Bamberg is a Unesco world heritage site, has great beer (8 breweries in the city alone) and if you want to visit a castle, Schloss Weissenstein at Pommersfelden is on the way to bamberg from Rothenburg. In Bamberg itself you can visit the "Neue Residenz" or drive 5km outside of Bamberg to "Schloss Seehof".
Also Bamberg to Heidelberg is at least a 3h drive, so either plan a later drop-off or get up early on your last day.

Munich Rental Car Pickup
One thing for you to check out....When we rented a car for a one-way rental last year in Munich (dropping off in Freiburg) it was cheaper to rent from the location two blocks from the main train station rather than from the train station location. Both cars are located in parking decks about a block apart, but the train station location has extra fees/expenses. I rent too many cars and can't remember if this was Hertz, Avis, or Eurocar.
