Spending a day in Toulouse, or elsewhere?

Quirks of ticketing means that it is cheaper for me to stay a few days after a conference I am attending in June ends... The conference in is Toulouse so would I be better off staying in Toulouse for the day and a half (plenty to see and do) or moving to another city and flying from there?

What is fun to do in Toulouse? Is it a nice city?

One thing not mentioned in the linked thread is that Tolouse is also home to the Airbus Factory. Check http://www.taxiway-resa.fr/v1.4/ for details of the visit.
