Depends what you want. History & tradition? Beach? Luxury? Trendy? Privacy?
I would look at the Biltmore Hotel in Coral Gables: http://www.biltmorehotel.com/resort/
Others could include:
Mandarin Oriental in the Brickell area of downtown Miami.
Fountainbleu on Miami Beach, tradition, but just completely redone.
The Resort at Fischer Island - privacy, ultra rich stay here
Ritz Carlton Bal Harbour - Norht Miami Beach - luxury shopping in Bal Harbour
South Beach Hotels: W, Loews, Setai

With regards to South Florida, I would recommend staying away from one-off boutique hotels. Stick to Marriott, Hilton, and other chains, as one-off motels and hotels are often not code compliant

You can't go wrong with the usual culprits, Marriott, Hilton, Starwood, etc. As I said before I would never stay at one-off independent hotels, hostels, or motels in South Florida. They have been featured in the local news (Local 10, specifically) for not being compliant with local building codes and in extreme cases, being infested with cockroaches or ants.
I'm not saying the giant chains aren't susceptible to these things (The NYC Marriott Marquis recently fell victim to an insect infestation of its own), but generally, the giant hotel chain locations down here are pretty well - managed.

Also, as a general rule, the closer you get to the beach, the higher hotel rates get. HOWEVER, there are a lot of garbage hotels on the beach, so do research.
Be wary of any off-beach hotel that says something to the effect of "walking distance to the beach". This may mean across several blocks of city, or a congested highway. Again, research is key.
