To receive stay and or room night credit towards Premier or Platinum status, a member must be a registered guest of the hotel and stay overnight. Stay and or room night credits and benefits of the program can only be applied to the member who is listed on the member’s profile.
A stay is defined as consecutive nights in the same hotel or resort regardless of the number of check-ins/check-outs that may occur. The member must reserve the room in their name, provide their Fairmont President’s Club number and stay overnight. When a member books multiple rooms under the same name, only the room occupied by the member will be counted for stay and or room night credit.

While I won't check every hotel loyalty program, I'm quite sure similiar language would appear in the T&C of every one as it's pretty much a universal rule you can only collect for what you yourself personally are using.

my experience at the Fairmont @ YVR when I booked 4 rooms under my name for 1 night, is that I was only credited for 1 room. YMMV.
You might get lucky, I got two stays credited for two separate bookings on the same dates for one room each (Chicago), both on my name for FNF rate. Take care to get to get two separate bills, that might help.
