Location: IAD, and sometimes OMNI/PR. Currently: not far from IAD, but home will always be SAN (not far from the "touch my junk and I'll have you arrested" Memorial TSA Check Point) even if I'm not there so much these days.

Oh I did. There are few meats Siracha doesn't go well on

Medium well for me, which a lot of American fare restaurants tend to get wrong. I usually end up with a well-done steak just short of burnt.

Did the Prime Rib 16 oz at the Keg tonite.. medium, and the au jus was excellent..

My wife had the Sirloin well done.

I disagree. I know I am in the minority liking my beef more on the cooked than raw side, but that's why restaurants offer options, so people can choose what they like. Otherwise everything would be vanilla.

Hanger Steak is underrated. They call it the Butcher's Cut for a reason. Great medium-rare with a red wine reduction and shallot butter.

I like my steak about medium well. I'm not sure if I should stick with medium well or go to medium.

How good is the beef you're getting?

If you're happy with the way you get it now, I'd recommend going to medium and at the same time going with one notch better beef at the same time.

The combination usually works out well.

Probably the beef I get from a widespread chain like outback or applebees.

Medium rare but with a good char on the outside...like it pulled off the grill at about 130*F so it's on the redder side of medium rare but to me it's all about being cooked over wood and getting the smoky caveman char on the outside. Or raw if it's real good beef!
