I do something similar but I'll simply saute it with garlic, ginger and soy, then throw it on top of rice with some steamed veggies for lunch.

Andy Ricker's recipe for Thai stir-fried chicken with holy basil—Kai Kaphrao Khai Dao. Best with thigh meat.

I make this almost every week, but since holy basil is hard to find I sub regular Thai basil and augment it with fresh mint.

I use it to make mini-meatloaves. We'll each eat one and the rest of the batch goes in the freezer, two to a ziplock sandwich bag. I use my standard meatloaf recipe. It comes out a little firmer than beef or turkey. I assume it's the result of a lower fat content.

some flavors dont go well with ground beef (or turkey, which seems to be for low fat)

so ground chicken can give you some more flexibility
also chicken burgers/sandwiches, and you can mix other things into the burger

ive done meatloaves with beef and adding things like BBQ and indian sauces to it
good point in above posts, can do same with chicken, and various extras/flavors

kipper, what doesnt have a council for sales, marketing, press, lobbying, etc ?

LARB GAI (Hot and Sour Chicken Salad)
cat: Thai, poultry, salad, main
servings: 8

4 c ground chicken
6 Tb fish sauce
4 Tb lime juice
4 ts ground dried chilies
3/4 c chopped red onions
1/4 c chopped celery
1/4 c chopped green onions
4 Tb ground roasted rice
Fresh raw vegetables (i.e., lettuce, green bean, cucumber)
7 c hot cooked rice or sticky rice

Cook chicken in a skillet over med heat. Cool. Add the rest
of the ingredients (except raw vegetables and rice) and toss.
Serve with vegetables and cooked rice or sticky rice.

P.S. Raw or cooked beef may be substituted: the dish becomes
larb neua.
