pizza steel

using a steel a great way to cook pizza. the steel is NOT stainless steel.!! it is just plain old flat rolled 1/4" steel. costs about $80. weighs about 15 lbs. it does have a tendency to rust(oxodize). the steel can be cleaned of oxide with vinegar soak overnight. most in house ovens go to only about 550F. if you want to cook your pizza at a higher temp, fire up the grill, wait till it hits your chosen temp, and pop the pizza in.

stainless steel is a lousy conductor, and probably not be so great for the necessary heat transfer.
