Location: Loud, dark, warm, lots of ethernet cables, and in some rack space.

My guess is that they would heat the plates to keep them warm for a short period of time. Another factor might be the feel of having a hot plate of food near the customer. That sense of freshness and fast service.

Think of it like chilled forks. Does t keep your salad cold or it is just for show?
