What food do you take with you on a flight

If I'm flying in Y, I will always bring some trail mix(the kind without m&m's). If it's a transcon flight, I will bring a sandwich without an offensive smell, and or a salad.

Always take clear mints for take off and landing to help with ear popping, along with chewing gum.

I'm not. I was surprised to be served kimchi on a NW intra-Asia flight a couple of years ago. Pretty brave.
If I have time and there's a Subway sandwich stand at the airport I get a dry-ish footlong for the plane -- something that will survive in my briefcase for awhile without turning to mush. BMT, no sauce. Some Subway sandwiches are inedible unless eaten immediately: meatball, tuna, that chicken-with-sweet-onion-goop thing. Too damp.

Last time I took something to eat onboard was at AMS coming from ATL on DL and continuing to TXL on KL. A wonderful Dutch matjes herring roll with raw onions and a sushi box. Munched those with great pleasure but do apologize if any FT'ers were sitting nearby.

I usually like dried fruit such as blueberries, cranberries, and mangoes. I used to take Clif bars and Tiger's Milk protein bars, but these days, they get me a bit gassy in the air.
A few years back, I was passing through SEA on the way to ANC, and one of my cousins who lives in SEA had me run out of the terminal to her to grab some take out she had picked up for me. I didn't know what it was, but she told it was a nice Caesar salad. I didn't open it until I got on board and we were already at cruising altitude. It was a bit of Caesar salad, a few garlic breadsticks, and wings. I couldn't tell if the pax around me were jealous of the food or offended by the smell. Probably a little of both.

Depends on the length of the journey and the airline. Under 2 hours, and I've never really seen the need - I don't snack when I'm not flying, and I don't seem to have gained this constant water sipping obsession that the bottled water companies have been keen to foster.
A bit longer, and it's likely to encroach on a mealtime. I'd still rather eat at the origin or destination, but may take a nice sandwich or (M&S style) salad with me, unless I know the airline's going to give me something palatable (and there are still a few out there that do...)
