I picked Delta, but both are good.
My comments may not be that helpful to you, but having flown both, I think both are solid transatlantic business class products. In December, I'm connecting through AMS and chose DL's EWR-AMS mainly for convenience, as I'll be starting my trip in New Jersey. If I were in NYC, where JFK wouldn't be such an inconvenience, I'd have a hard time deciding. I'd chose more on the convenience of the airport and flight time.
For me it depends upon the aircraft used. KL WBC seats are very like the WBC seats on NW. I dislike the recliner style DL BE seats. So that to me makes a difference. The food on KLM was very good on my last flight, as so was my DL BE food. You do get a little gift from KLM, of a little Dutch house (contains gin!) that you will not get with a DL flight. Many people collect these little hausje, and they have numbers. Otherwise you would probably enjoy both flights.
Which DL operated flight flies from AMS-EWR? I was under the impression that DL stopped operating all flights to AMS and they are now operated by KLM. Further, I don't think DL ever flew nonstop between AMS and EWR.

This is a NW route...I think I remember reading recently that that flight was switched away from a NW A330, however.
I'd go with KLM. I've never had a bad flight on KL in C and enjoy the little Dutch house with gin. Delta just kicks you in the butt as you leave and quips, "We enjoyed taking you for a ride."
I flew the DL/NW EWR flight this summer and it remains the loan DL flight to AMS from the NY area (former NW flight now on a 763 which is still better than the discontinued JFK 757). This is important because other than CDG, AMS is DLs primary inter-Europe hub and this flight is the only one that permits Z upgrades (PMU or miles). I happen to be booked on a full BE award at 100K and both the late flight on KLM out of JFK and this flight are available (early Feb. 07). Mixing a JFK outbound on KLM with an EWR return on DL ups the millage to 150K - not an option in my book.
I am very content with BE. I sleep well in the recliner particularly on a short night. I should be able to get into my room upon arrival in AMS and get a few more winks before an early afternoon meeting. Then a quick nap before a dinner meeting and I am on zone. Done this before.
The KLM flight available is the 10pm flight which I am less thrilled about because the late departure/arrival. Also, on the return, the DL flight is a morning flight that gets me in shortly after 1pm on a Friday which is not a bad time to start the weekend. The KLM outbound is on a 747 and the return on a 777. If the service and seat were truly superior, I would go that route but from what I am gathering, the benefits, while a plus, are not compelling enough.
FWIW, the 777 seats 2-3-2 and when traveling alone, I prefer an aisle that doesn't require me moving for someone else. On KL, that only will happen if the C cabin is relatively empty which is not a guarantee.

It is not 'Gin". It is some kind of Dutch liquor made by Bols called "Genever".
